Hidden dangers in raw freshwater products

2026-01-30

In pursuit of a delicious taste, some consumers choose to eat raw or half cooked freshwater fish, shrimp, crabs, snails and other products, but behind the deliciousness lies hidden health risks. Recently, the Beijing Municipal Market Supervision Bureau issued a consumption tip, reminding consumers to be alert to the risk of parasite and pathogenic microorganism infection. At the same time, it pointed out that the commonly used Baijiu and vinegar soaking methods can not completely kill parasites, so when cooking at home, it must be thoroughly cooked before eating, and it must not be eaten raw or heated incompletely. The market supervision department pointed out that freshwater products are intermediate hosts of parasites such as Clonorchis sinensis (liver fluke) and Paragonimus westermani (lung fluke), and may also be contaminated by pathogenic microorganisms such as Vibrio parahaemolyticus and Staphylococcus aureus in breeding, transportation, and processing. Once raw or contaminated products that have not been thoroughly heated are consumed, parasites and pathogens are highly likely to invade the human body, which may cause diseases such as liver fluke disease, acute gastroenteritis, and hepatitis A. To reduce dietary risks, market regulatory authorities have proposed cooking standards to consumers: purchase freshwater products from legitimate supermarkets or agricultural markets with traceable sources, and resolutely avoid purchasing wild fish and shrimp from unknown sources; Raw and cooked processing utensils must be strictly separated, and knives, cutting boards, and containers used to handle fresh fish and shrimp must be disinfected immediately after use. It is strictly prohibited to mix them with utensils used to handle fruits, vegetables, and cooked food to prevent cross contamination; It is necessary to cook thoroughly before consumption. Common freshwater fish such as green carp, grass carp, silver carp, fat headed fish, carp, and crucian carp may carry liver flukes. Adequate heating is an effective way to kill parasites. Do not eat raw or heat incompletely for the sake of taste. In response to dining out scenarios, market regulatory authorities remind consumers to choose formal restaurants with complete licenses and hygienic environments, and to be cautious when consuming raw or semi cooked freshwater fish and shrimp products; Children, the elderly, and individuals with weakened immune systems should try to avoid consuming such foods as much as possible; If discomfort symptoms such as abdominal pain, diarrhea, and fever occur after meals, it is necessary to seek medical attention promptly and proactively inform the doctor of the relevant situation for accurate diagnosis and treatment.
