Developing the whole grain industry is a strategic choice to ensure a win-win situation between food quantity security and nutritional security. Currently, industrial development is constrained by various factors such as insufficient consumer awareness and low market acceptance. We should explore development paths with a more open mindset and innovative thinking, and promote the formation of a complete chain, reasonable structure, supply-demand adaptation, and continuous upgrading of the whole grain industry development pattern. The grain consumption market is ushering in a whole grain revolution. The National Grain and Material Reserve Administration and other departments recently jointly released the "National Whole Grain Action Plan (2024-2035)". Implementing the National Whole Grain Action Plan and developing the whole grain industry can improve the utilization rate of food resources, improve the dietary structure of residents, promote nutritional balance, enhance national food security and the overall nutritional health of the population. This year, China's grain production has exceeded 1.4 trillion kilograms for the first time, firmly holding the rice bowl in its own hands. The problem of excessive grain processing is prominent. The cuticle and germ of grains have been removed, and only the endosperm has been retained, resulting in low yield of finished grains, increased food loss, and a large loss of nutrients in grains, which may lead to "hidden hunger", cardiovascular and cerebrovascular diseases, diabetes and other chronic diseases. A survey shows that over 80% of adults in China suffer from severe deficiencies in whole grain intake. Developing the whole grain industry according to local conditions, promoting food conservation and loss reduction, and promoting residents' nutrition and health consumption can ensure national food security at a higher level. China has abundant grain resources, but the development of the whole grain industry is still in its infancy. Although whole grain foods such as whole wheat flour, whole wheat noodles, brown rice, brown rice baked goods, buckwheat noodles, etc. are gradually becoming popular on the dining table, the consumption of whole grains is seriously insufficient. The consumption of whole grain products accounts for less than 1% of the total grain consumption, far lower than the 30% proportion in some developed countries, and has enormous development potential. It should also be noted that the development of the whole grain industry is constrained by various factors such as insufficient consumer awareness, low market acceptance, incomplete standard system, poor palatability of whole grains, and short industrial chain. Responding to the symptoms, implementing comprehensive policies, and promoting the formation of a complete chain, reasonable structure, supply-demand adaptation, and continuous upgrading of the whole grain industry development pattern. The public's insufficient understanding of whole grains has led to insufficient market demand. We should implement a whole grain promotion and guidance action, by popularizing knowledge of whole grain nutrition and health, conducting publicity and guidance through multiple channels, and promoting whole grain food in multiple subjects and scenarios, etc., to improve people's awareness of whole grains, significantly increase the proportion of whole grains in residents' dietary consumption, enrich high-quality whole grain products that meet residents' nutritional and health needs, and achieve dynamic balance between food supply and consumption. The standard system for the production, processing, and testing of whole grain foods is not yet perfect. Although China's whole grain industry has developed to some extent, the corresponding production, processing, and testing standard system is not yet perfect, which affects the quality of whole grain food. We should implement the whole grain standard leading action, improve the standard system, enhance the overall level of the industry, and fully leverage the role of whole grain food in promoting national health. Poor palatability and susceptibility to oxidation and spoilage are two pain points that affect the development of the whole grain industry. Whole grain foods are rich in dietary fiber and have a rough texture and strong chewiness, making them less popular among consumers; Embryos are rich in unsaturated fats and biological enzymes, and should not be stored. Implementing the whole grain technology innovation action can improve the taste through techniques such as extrusion, enzymatic hydrolysis, fermentation, and germination, and solve the problem of easy oxidation and deterioration through enzyme inactivation stabilization treatment. We should also promote the selection and breeding of suitable grain varieties for whole grain food, improve the quality of bulk grain varieties, and increase the yield and quality of whole grain and miscellaneous grains, fully tapping into the potential for increasing grain production. Promote the innovation of key common technologies for whole grains, and create diversified whole grain raw materials and foods that are in line with the characteristics and habits of grain consumption in China. Deepen research on the nutritional health of whole grains and effectively prevent chronic diseases. The lack of coordination in the production, processing, sales, and consumption processes of the whole grain industry leads to resource waste and low efficiency. If there are problems with insufficient variety selection and supply of high-quality raw materials in the production process, outdated processing technology and equipment, single processed products, and unstable product quality in the processing process, and improper marketing strategies and channels in the sales process. We should implement the action plan to enhance the whole grain industry, accelerate the integrated development of the entire industry chain, cultivate industrial clusters, strengthen food brand construction, and improve the comprehensive efficiency and competitiveness of the industry. As the saying goes, grains are essential for nourishment. To develop the whole grain industry, we need to explore the path of industrial development with a more open mindset and innovative thinking, so that every grain can become a valuable asset that nourishes life and protects health.
